nomnom face recipe.

So I'm super behind on pictures, I took them just haven't loaded yet. I'll catch up this weekend. But today I made a delicious thing and want to share the recipe.
Avocado egg salad. It's all super foods and all natural. Not necessarily low cal, (eggs and avocaco..) and ovbiouslly not vegan. Duh. But here's what I did:
Nomnom Face Salad recipe

1 ripe avocado
Plain fat free or low fat greek yogurt
Spinach
Celery
White onion
Hard boiled eggs
Salt
Pepper
Hot sauce (opt. )


In a food processor, 3-4 handfuls of spinach and 5 stalks of celery, 1/4 cup onion.
Process until finely chopped (not yet to a paste)

Put in bowl and set aside.

1 full avocado and 1/2 cup plain greek yogurt, process until creamy smooth.
Stir this mix into the spinach stuff.

Dice 6 hard boiled eggs and mix in. (I left mine pretty large chunks for texture)
Then add salt and pepper. I also did some hot sace to taste.

 This was just an idea I had today, sorry if I stole someone elses recipe, I'd never seen it. Also, I want to try adding tomatoes and water chesnuts and some other stuff, it definitely has potential to play with it. For me, it's gonna be a great protein and good fats filled pre workout breakfast on a lettuce cup or rice cake.
*Just a tip, dense foods like this are best early in the day, to keep you full and happy all day!

Okay, so I didn't take this picture, caught me.

Tiny to me, is our world.

Because in comparison to our God, the world is tiny. Every person, problem, everything.

This was an eye opener for me, being stuck in so much turmoil lately. I've gotten caught up with work and wanting to move and being stressed, and none of that matters. None. Our God is greater, stronger, bigger, and better than any of this. We are merely ants, as he scrolls through the time he created for us. Everything is miniscule compared to this love, which is especially important to remember this week.

Easter, remember?

It's not about who's making the deviled eggs. It's about the one who was crucified on the cross for our sins, and took our burden.

Everything else, the whole world, is nothing when compared to that.

Someone who makes me happy.

Brandon would have been an obvious, so this is Tuckerbutt.

Yeah, he is smiling. I guess I make him happy too.

Another thing that makes me happy is the possibility of moving to Gainesville, which is now being reconsidered because I am transferring to Santa Fe and my cousin is moving there. This could happen.

I just don;t want to be stuck in Ocala doing the same thing I've been doing. This would be better academically and I'd be happier. Of course I'd bring Tuckerbutt too. ^_^

Well the task was color, and my color was yellow. And I ended up buying a yelllow shirt and yellow shoes too, so I stayed pretty true to my color. But I bought a lot of stuff. A. LOT. And I had so much fun with my best friend. I got home kinda late and went straight to bed, which is why I'm posting 4/2 on 4/3. But it was a pretty good day. That's all.

Fall has fell and Spring as sprung, but summer's coming and it's going to be hot as usual.

April 1st Picture!
I turned it rightaways, but my computer won't let it be anyway but cockeyed. So be it. It's not particularly creative, I didn't even use my real camera haha. However, it's still magical. Chili Face Noodle Punch shirt FTW!!! It's brand new, I'm stoked. Even though It's too big :( they don't have white in extra small so I guess I'll deal with it. And keep trying to shrink it.
Today was an excellent day though. Week 3 day 7 of Bikini Body program, still loving every bit of it! ( Lifeplusfitness.blogspot.com) Long day at work, but the last Sunday I ever have to work at Honda! Then I came home and visited with my Dad's side of the family. BR came over and we made organic nutella and organic lemon poppy seed muffins. (Both from ChocolatecoveredKatie.com, amazing website!)
Tomorrow I'm going shopping with Sarah, it's going to be brilliant. And I'll post my picture, hopefully with my real camera!
